Schon zu Römerzeiten gab es in der Camargue Salzgärten. Eines der größten Salzgebiete sind die Salins du Midi in der Nähe von Aigues-Mortes, aus denen hauptsächlich Speisesalz gewonnen wird. Von Weitem schon grüßen die Salzberge.
