Morcilla is like the english black pudding a blood sausage. The most well-known and widespread is morcilla de Burgos which contains mainly pork blood and fat, rice, onions, and salt. But every area in Spain has a different recipe. so there are lots of varieties. s a side dish or on its own. There are many derivative foods made from morcilla, such as omelettes, stuffed red pepper, puff pastry, pizza, flavoured nachos, croquettes, and a range of fillings for different dishes.

Lerma is a small town (pop. 2,500), which occurred by Francisco Gómez de Sandoval y Rojas, Marqués de Denia and Duke of Lerma (1553-1625) in the early 17th century. He was a grandson of the General Jesuit Francisco de Borja and a leading representative of the counter -reformation in Spain. He was also a favorite and minister of King Philipp III. In 1601, he commissioned the architect Francisco de Mora, which was already active in the construction of the Escorial, with the planning and establishment of his new ducal palace, which was only completed in 1617. The building was used as a prison during the Spanish Civil War. Lerma is a small town (pop. 2,500) that was given its present appearance by Francisco Gómez de Sandoval y Rojas, Marqués de Denia and Duke of Lerma (1553-1625) in the early 17th century. He was a grandson of the Jesuit general Francisco de Borja and a leading representative of the Counter-Reformation in Spain. His uncle was the former Archbishop of Seville, Cristóbal de Rojas y Sandoval (1502-1580). He wanted to be buried in Lerma. Some twenty years after his uncle's death his nephew chose the parish church of San Pedro as a suitable site for the necessary demolition and subsequent new construction of the collegiate church.
