With all this extra time on my hands, I've been cooking more lately. I've been making bread because I ran out of store-bought bread, and have been baking cookies once a week so I could have something sweet to nibble on. Tonight, Thursday, April 16th, 2020, I made this Asian Ramen Shrimp soup and it's more or less something I threw together from an existing recipe that I tweaked slightly. It uses Ramen noodles and tiny shrimp that comes in a can.

There's nothing like fresh-baked homemade bread.

While I was charging my new weedeater, I fixed myself a dish of ice cream. It was Death By Chocolate ice cream, with chocolate syrup, chocolate sprinkles and a cherry on top. I lead a real exciting life, don't I?

This was one of the workers at the Fudgery mixing up another batch of fudge. It's a store at the Mall where you can stand in front of the window and watch them actually making the candy. Many different flavors of fudge was all I remember them selling. I'm not sure if this picture counts for the challenge this week. Because I don't feel the least bit guilty about my chocolate addiction. For the Saturday Self-Challenge group, who's theme this week was "Guilty Pleasures."

For dinner tonight, I cooked grilled salmon with hollandaise sauce, scalloped potatoes and breaded okra. I'd never tasted, or made, hollandaise sauce before, but it complimented the fish perfectly. The place setting is an antique and was hand-crocheted by my Grandmother Wright. I was cooking all day - for lunch I had a mushroom and cheese omelette, with fresh organic mushrooms, and in the afternoon I made some banana-nut bread. Yum yum! I'm sure glad I can cook!

I made these Irish Mist brownies last night. The topping had cream cheese in it and they were very tasty.

This is what I made for dinner tonight. Alfredo sauce over bow tie pasta and chicken, with a little bit of garlic and sweet basil to season it with. On top of it all, I sprinkled a little Parmesan cheese. It's the best tasting thing I've made in a week or two!

These are chicken strips coated with Cheese crackers and shredded cheese, then baked. Crunchy and cheesey on the outside, moist on the inside.

If you like a nice lemony taste, this is the dessert for you. It always seems to go over well when I take it to functions I attend. It has eight layers and between each layer is a liquidy lemon sauce that really sets it off.
