I call the 1st PiP: The man in the moon.
They are "Chifles", thin slices of fried green plantains that have a unique flavor. Most of them are salty
The plantains used to fry this treat should be green and not ripe. When green they are still firm and not too sweet. As a result of their texture the slices keep their shape and their flavor, their balance of starch and sweet, is perfect. If you want sweeter chifles, you choose a riper plantain, but then you begin to lose control of the shape. Plantains are cooking bananas one of the many species of bananas to be had in Peru.
They are much better than potato chips!
