We call them "gobblers" because we eat them, often quickly.
This is a wild turkey hen. That black business hanging down from her breast is her beard -- it's relatively uncommon among hens, but not especially rare, either. Sticking from her forehead like a fleshy horn is what's called a snood. Those things are visible in the other picture, but this one is more dignified.
