This is/was all the interior fittings and fixtures, is it, for one supermarket?

Not all of it. Through the window I could see cash registers, big refrigerators and other valuable things pulled to the doors, probably being sold elsewhere. As far as I could tell, this was all of the ceiling stuff like ducts and those big fiber tile things, plus the metal framework. Flooring, maybe. I couldn't recognize anything else, really.

It is based on a statement by my former physics teacher. He was pretty messy. When asked, he used to say that order is only ONE possible state of chaos. :-))

Seems like an odd way to demolish. In most of California they would have had trucks hauling the stuff away all day and wouldn't have piled it like this.
